BASIC HOMEMADE MUFFINS

Ingredients:

1-3/4 c. (425 ml) flour

1/4 c. (50 ml) sugar

2-1/2 tsp. (12 ml) baking powder

1 egg, beaten

3/4 c. (175 ml) milk

1/3 c. (75ml) vegetable oil

 

Optional ingredients: 1 cup (250 ml) blueberries or cranberries (washed), or 3/4 cup (175 ml) raisins, chopped nuts, or chocolate chips.

 

Directions:

 

  • Preheat the oven to 400°F

  • Measure the flour, sugar and baking powder into a medium bowl. 

  • In a small bowl, whisk together the egg, milk, and oil, and add all at once to the flour mixture. 

  • Stir just until the flour is completely moistened, but don’t over-mix… a few lumps are OK! 

  • Gently stir in any optional ingredients, if you are using them.

  • Spoon batter into a well-greased or paper-lined muffin tin, filling the cups almost to the top. 

  • Bake at 400 degrees F for 20-25 minutes, until a toothpick poked in the middle comes out clean.
